Gourmet Rustic Picos — Spanish Breadsticks

The soul of a Spanish picoteo board. Gourmet Rustic Picos are distinguished from the original Picos Ultreranos in several ways. These use an updated recipe incorporating natural wheat sourdough (masa madre) and rye flour, combined with an elongated, rustic shape and an extra-shatteringly crisp texture. Rye flour naturally bakes into a noticeably darker, more rustic tone and adds a subtle, nutty depth.

The Gourmet variant undergoes a specialized, slower baking process. This extended time in the oven deepens the caramelization of the natural sugars in the dough (the Maillard reaction), giving the mini breadsticks more of a brown exterior and an extra-shatteringly crisp, hollow-centered bite.

Still, like the original Picos Ultreranos, they are small, crispy breadsticks from Andalusia — crunchy yet delicate with a subtle olive oil flavor that makes them endlessly snackable.

Serve alongside jamón, Manchego, and olives for an authentic Spanish tapas course. Also wonderful on their own with a glass of Manzanilla sherry.
